The Chianti Classico is allowed to absorb the aromas of the French oak for 12 months before it is bottled and allowed to rest and mature for a further eight months
What all the wines have in common: They are all 100 percent organic
The winery has been owned by Swiss winegrowing couple Kathrin and Johannes Davaz since 1990
often referred to as the "bitch"
Merlot was once also grown here
