Aged 30% in oak barrels and 70% in stainless for 6 months
Vinification: Hand harvested + direct pressed into stainless steel where it undergoes malolactic fermentation before aging
The terroir in Montgueux is nearly identical to the growing sites found further north in le Mesnil
Joachim grew up in Norway and Olivia in San Francisco
Fermentation takes place in used 500 + 1200 L barrels
Les Deux Anes "Limo d'Anes" Region_Japan Aged 30% in oak barrelsGrapes: Carignan Region: Languedoc Roussillon, France Vintage: NV Viticulture: Biodynamic Soils: Clay + Limestone Yeasts: Native Vinification: The grapes are hand harvested and destemmed before they are direct pressed to tank. The wine ferments for 2 3 weeks and is then transferred to grolsch top bottles to finish fermentation in bottle as a ros pet nat. The wine is not disgorged and zero sulfur is added. Aging: A few months Fining or Filtering: None
