Pair it with braised pears, tres leches cake, or basque cheesecake. The vineyards in Malaga are treated to an extremely dry Mediterranean climate, and because they are also relatively high in elevation, go through extreme diurnal shifts in the summertime. Altogether, this climate produces extremely concentrated and acidic grapes. The grapes are late
